What is zydeco? What started as a blend of Louisiana French squeezebox music with Afro-Caribbean beats has evolved to include guitar, drums, and many other blues/R&B instruments. The word Zydeco originates from a colloquial Creole French expression “Les haricots ne sont pas salés,”  meaning “the snap beans aren’t salty.” Today, the phrase “the times are rough” rings the same meaning. Early zydeco offered a way for the rural poor to express and escape the hardships of life through music and dance.
